Pickled Beets Rag is a fitting companion to Corn Shucks Rag (1908) its form being AABBACCBB with a 4-bar introduction. The melodies have a folksy character and as an adaptation for recorder have a special charm as all the voices have their say. In the A-strain, it is the 1st tenor that has all the glory with a long bubbling solo. It is honours even in the B-strain with the basses leading the dialogue with the upper voices answer with heavy chords. The treble voice finally has the stage in the C-strain where he or she has a jolly solo. An ideal ensemble piece.
The cover of the original sheet music is a surrealistic picture of humanised beetroot in close embrace against a nocturnal city skyline under the approving gaze of a jovial, smiling moon.
