All that can presently (May 2013) be gleaned about by Internet searching is that T. Fred Henry is the one-off composer of Eatin' Chocolates (1903).

Since writing the above another tidbit has been found in February 2018. Apparently according to a CD liner, T. Fred Henry was a famous Des Moines bandleader. He composed Eatin' Chocolates for the Purity Candy Company in his hometown.
Another source says that he was a locally-known African American musician, leader of T.F. Henry's Band living at 1701 Woodland, Sherman Hill.
